„Okonomiyaki”, or „the way you like it”: this is the name of the Japanese pancake. Unlike (most) Hungarian pancakes, it is a savoury treat which contains many delicious ingredients. Some call it the pizza of the Japanese, but it is more like a rich omelette or a thick pancake. Having said that, we have to admit it is quite different from the pancakes we make. How so?

Let’s begin with the dough itself. It is made of flour, nagaimo (a kind of yam), dashi (fish soup base) and eggs, so you sure won’t put maple syrup on top! However, there are a lot of things to enrich the dough with. The most popular ingredients are thin pork belly (but not bacon!), squids, octopus, shrimps, cabbage and other vegetables. As „yaki” means „grilled”, the above are all fried or grilled to achieve the best taste.

The savoury delicacy is mostly made in the Kansai or Osaka-style which means that the pancakes are relatively thin. The dough is the one described above, and it is the recipe that is followed in most regions; however, it can be varied from county to county and there are special pancakes only found in a certain region. A good example is the so-called modan-yaki, which means that the pancakes are piled up on the plate, creating multiple layers; to make it more exciting and nutritious, the Hiroshima-style okonomiyaki goes even further: udon and fried eggs are found between the layers and the whole thing is topped with cheese! Yum! Wherever we try okonomiyaki, it is most likely that we can experience the okonomiyaki-sauce as well, since they pour it over the pancakes in every region. It is similar to Worcester sauce, but it is thicker and sweeter. As a final touch, the Japanese put aonori and (seaweed flakes), katsuobushi (bonito flakes) on top, together with Japanese mayonnaise and pickled ginger.

There are also „do-it-yourself”-type of restaurants, where guests can make their own okonomiyaki on a teppan (hotplate), whereas in traditional eateries the chef will make you a delicious okonomiyaki, „as you like it”!
